These zesty little bites of heaven are great for a post-workout treat, breakfast on-the-go, or a mid-day snack. They're so yummy we reckon they belong in the dessert section, too.

You will need:

  • 1 cup cashews
  • 1 cup rolled oats
  • ⅔ cup desiccated coconut
  • ½ cup vegan vanilla protein powder
  • Rind of 1 lemon, grated
  • 1 ½ tablespoons lemon juice
  • ⅓ cup maple syrup
  • ½ cup desiccated coconut, extra

  • 1Place cashews, oats and coconut in a food processor and process until fine.
  • 2Add protein powder and lemon rind and process until well combined.
  • 3Add maple syrup, then slowly add lemon juice teaspoon by teaspoon, blitzing after each addition, until the mixture has a firm but sticky texture.
  • 4Spread extra coconut over a large plate. Roll the mixture into 12 individual balls, then roll each in coconut.
  • 5Refrigerate for 30 minutes or until firm.
